This week was harder for me on Weigh Me Wednesday. I have really put the weight on at 13 lbs. gained. I have a Dr. appointment Monday, so I am ready to compare with that scale. I was also supposed to run a 5K this weekend at the Race for the Cure. When I found out I was pregnant though, I decided against it because I didn’t know how I would be feeling. My mom ended up doing it, so we cheered her and everyone else on, but I hated seeing everyone go by without me doing my part. If only I had known that I was going to feel well that day. Next time! We already have our team shirts planned!
I also have a new recipe for you. We are trying this out tomorrow and I can’t wait! I hope you all enjoy as much as I hope we do.
Spinach Squares
Ingredients:
1 lb Sharp cheddar cheese
2 (10 oz) packages Frozen chopped spinach
1/2 stick Butter or margarine
1 cup Flour
1 cup Lowfat milk
3 Eggs, beaten
1 tsp Salt
1 tsp Baking powder
Directions:
1. Drain defrosted spinach well.
2. Melt butter in baking dish. Mix together flour, baking powder, salt, eggs, spinach and cheese.
3. Smooth into baking dish. Bake at 350 for 35-40 minutes.
